oz mascarpone

box ladyfingers

pinch salt

egg yolk

bunch peppermint

cup simple syrup

cup coffee liqueur

cup brewed coffee

cup heavy cream

cup sugar

0 In the bowl of a stand mixer fixed with the paddle attachment beat together the egg yolks, chocolate liqueur, heavy cream, sugar, salt, mascarpone cheese, and cocoa powder for 1-2 minutes. Scrape down the sides of the bowl and beat again until just combined and fluffy. 2 Whisk together the coffee and peppermint simple syrup in a shallow bowl or dish. One at a time, dip each lady finger into the peppermint coffee, quickly turning it over until wet on each side but ensuring they don't sit in the mixture or they'll be soggy. Arrange them in a single layer in a 7x11 oval dish, breaking some in half if needed to fit. 3 Spread on half of the filling, then add another layer of the dipped lady fingers, then spread on the rest of the filling. Cover with plastic wrap that is touching the top of the dish, then transfer to the refrigerator to chill for at least 2 hours and preferably overnight. 5 Remove the plastic wrap and dust with cocoa powder and sprinkle with crushed peppermint.View original recipe
