This late summer salad is so fresh, easy to make, and extra delicious with a homemade honey lime vinaigrette.

What you need

tsp black pepper

tbsp kosher salt

bunch mint
chicken breast
cup olive oil

fl oz lime juice
oz feta

tbsp honey

persian cucumber

clove garlic clove

dash dijon mustard

cup cherry tomato
tbsp red wine vinegar

avocado

ears sweet corn

Instructions
0 Cut corn off of 2 ears of corn, dice 2-3 Persian cucumbers, halve 2 cups cherry tomatoes, cube 1-2 peaches, cube 2 grilled chicken breasts, dice 2 avocados, cube 8 ounces feta, and slice some basil and mint into ribbons. Add everything to a large bowl. 1 Make the vinaigrette by combining all vinaigrette ingredients in a small-medium sized bowl. Whisk very well to combine then test and add additional salt if needed. 2 Pour vinaigrette over salad and toss well to combine. Serve with additional fresh herbs.View original recipe
